Watermelon and feta salad
Watermelon and Feta Salad is a refreshing and flavourful dish that combines the sweetness of watermelon with the tanginess of feta cheese and the freshness of herbs and greens.
Watermelon. Watermelon has it all: high levels of vitamins A, C and B6, as well as potassium for cramps and magnesium. Magnesium helps muscles relax, which can prevent premature contractions during pregnancy.
Feta that is pasteurised is safe to eat during pregnancy.
Ingredients
4 cups of cubed seedless watermelon
1/2 cup of crumbled feta cheese
1/4 cup of chopped fresh mint
2 tablespoons of chopped fresh parsley
2 tablespoons of olive oil
2 tablespoons of balsamic vinegar
Salt and pepper, to taste
In a large mixing bowl, combine the watermelon, feta cheese, mint, and parsley.
In a small mixing bowl, whisk together the olive oil, balsamic vinegar, salt and pepper.
Pour the dressing over the watermelon mixture and toss gently to combine.
Serve the salad chilled, garnished with additional mint or parsley if desired.
You can add some extra ingredients like strawberries, peaches, red onion, cucumber, or arugula to make it more flavourful or make it more filling.
